Winemaking is based on respect for the terroir and the biodiversity that exists at Regine Sumeire's domaine. Since 2005, La Tour de l Eveque is operated in organic, without weeders or chemicals. The soil is worked without herbicides and with tillage, with the help of infusions and other biodynamic methods. At Château la Tour de l eveque, the harvest is done manually and the sorting is careful in order to get the best out of it.
