The domain
The Bordelet Estate is located in southern Normandy, on the Armorican Massif. The farm consists of 23 hectares of certified organic orchards producing cider apples, perry pears and corms.
Eric Bordelet, originally a sommelier, took over the family business in 1992 after a long apprenticeship with some of the biggest names in the restaurant and wine world. Didier Dagueneau also played a decisive role in the project. Mr Bordelet applies everything he has learnt about oenology to cider and perry.
Today, the vineyard is cultivated in accordance with organic and biodynamic principles. Eric Bordelet's estate has held the Qualité France licence for organic production for around ten years.
Around thirty varieties of apples (bitter, sweet and tart), twenty varieties of perry pears and eight varieties of cormes are grown and then picked or harvested by hand.
The fruit is blended, coarsely crushed and gently pressed. This is followed by settling, racking and fermentation. The natural, traditional fermentation process takes place in vats or barrels and in bottles over several weeks or months, depending on the vintage, with varying amounts of natural residual sugar (fructose) and therefore without chaptalisation (the addition of sucrose). Some of these ciders and perries by Eric Bordelet are vintage.
Bordelet produces six thirst-quenching cuvées and three gourmet cuvées. Of course, you absolutely must try its iconic Sydre Brut and Poiré Authentique, but you will also discover some unusual varieties with Sydre Argelette and Poiré Granit (a genuine pear wine). Very recently, Eric Bordelet decided to bring Cormé (made from the cormier tree, which has become very rare in France) back into fashion.
Today, his ciders and perries can be found on the finest tables in French restaurants.
