POUILLY FUME
The famous Pouilly vineyard produces two dry white wines: the best known, Pouilly Fume wine also called Blanc Fumé de Pouilly is made in 100 % Sauvignon on 1400 hectares and Pouilly sur Loire produced from the Chasselas grape variety, on only 30 hectares. Pouilly Fume is a delicate wine to produce because Sauvignon is a grape variety particularly sensitive to climatic variations, since it does not support sudden changes in climate, exposure or terroirs.
This sensitivity can be found in Pouilly Fumé wines, which are quite expressive with fruity and floral aromas often complemented by vegetable, smoke or mineral notes. The aromatic palette of these wines is rich and intense, especially thanks to the many terroirs that make up the appellation: more freshness on limestone soils, slightly more roundness due to kimmeridgian marl soils, tension on clay and flint, and flexibility associated with siliceous and sandy soils.
It is generally recommended to serve the Pouilly Fumé wine within 6 to 18 months of harvest for the pleasure of tasting it young, however some cuvées have a very good storage potential in the cellar. They are wines that are easy to consume, to combine with an aperitif, an appetiser or a meal thanks to their adaptability and their different aromas of almond, white flowers and hazelnut.
