Saint-Chinian is an appellation in the Languedoc, centred around the village of the same name at the foot of the Montagne Noire in the Hérault. Granted AOC status in 1982, it is one of the region's historic wine-growing areas, with vines cultivated here since Roman times, when wine was transported along the Via Domitia to Rome.
What really sets Saint-Chinian apart is the clear divide between its two main growing areas. In the north, sheltered by the Caroux and Sommail mountains, the soils are dominated by schist, producing warm, rounded and supple wines that can be enjoyed relatively young. Further south, limestone soils give the wines greater structure, with more body, firmer tannins and better ageing potential. The same grape variety planted on either side of this geological divide can therefore produce noticeably different wines, giving Saint-Chinian a dual personality rather than a single, uniform style.
Red wine accounts for most of the appellation's production, typically based on a classic blend of Syrah, Grenache and Mourvèdre, sometimes complemented by Carignan from the oldest plots. Syrah, often the dominant variety, provides much of the structure and spicy character, while Grenache brings richness and roundness. Rosé wines, made from the same varieties using direct pressing or the saignée method, focus on freshness. White wine is less common and is generally based on Viognier or other Mediterranean grape varieties, producing a generous, aromatic style.
Saint-Chinian is now home to a significant number of estates that have converted to organic viticulture, a trend driven by a new generation of winemakers keen to preserve the area's naturally poor, well-drained soils. This approach is reflected in wines that favour purity of fruit over excessive concentration, often with deliberately limited yields. One such producer is Domaine Canet Valette, whose range at Infinivin includes several organically produced Saint-Chinian wines.
A Saint-Chinian from schist soils, with its softer, more supple character, works well with everyday dishes such as grilled meats, charcuterie and simple slow-cooked dishes. A more tannic Saint-Chinian from limestone soils is better suited to richer food, including game, slow-cooked stews and meat in sauce, where its structure balances the richness of the dish. Serve at around 16-18°C. The more structured wines from the southern part of the appellation can also benefit from brief decanting to soften tannins that may still be firm in their youth.
