How long does an opened bottle of red wine keep?
An opened red wine keeps 2 to 3 days if resealed and stored cool for lighter styles, or at room temperature for full-bodied ones. With a vacuum stopper, it can hold up 4 to 5 days without noticeable loss. Beyond that, the wine loses its fruit and starts to oxidize.
Which red wine pairs best with cheese?
Red pairs especially well with pressed cheeses like Comté or Beaufort, which go nicely with a Burgundy Pinot Noir or a Côtes du Rhône. Avoid pairing with fresh goat's cheese, where a white wine works better.
