Au Sommet is a Riesling from old Alsace vines rooted in pink granite soils, subsequently vinified in Rotalier by Anne and Jean-François Ganevat following their particularly free and demanding approach to fine white wines. Fermentation takes place with indigenous yeasts before more than three years of ageing in demi-muids and further bottle maturation, without fining, filtration or added sulphur. Ripe citrus, floral and stony nuances combine on a tense, profound palate driven by saline minerality and a remarkably persistent finish.

A fascinating expression of the Ganevat philosophy, taking Riesling beyond its usual framework and applying the patient ageing and precision associated with the house’s finest whites. Au Sommet combines varietal energy, impressive depth and a distinctly stony, saline character that makes it particularly rewarding to follow as it evolves in the glass.

Anne et Jean-François Ganevat Au Sommet pairs beautifully with oysters, scallop carpaccio, turbot with beurre blanc, smoked trout or mature Comté; serve at around 12°C and open at least one hour beforehand to allow this long-aged Riesling to fully unfold in the glass.
