The name ES-56 means “Eocene Flint 56 million years”. This cuvée, known as La Bourgeoise in previous vintages, comes from old Sauvignon vines on flinty slopes originally farmed by the monks of St-Satur. Minerality and persistence on the palate are the order of the day. This grand blanc de garde will express its character after 10 to 12 years of ageing.
Alcoholic fermentation takes place partly in temperature-controlled stainless steel vats, and partly in Tronçais oak barrels. Aging on fine lees lasts around 12 months, with regular stirring of the lees for 7 to 8 months.
