Castellu di Baricci Corse Sartène Rosé captivates at first sight with its very pale, brilliant pink colour, tinged with salmon hues. On the nose, it reveals a subtle, refined bouquet, where aromas of white-fleshed fruit, such as juicy peach, blend perfectly with a light floral touch, evoking the freshness of spring. On the palate, the attack is very fresh, with a lovely liveliness that gradually expands to give way to an aromatic return to the fruit, reinforcing the sensation of purity and lightness. This rosé stands out for its fullness, revealing a round texture and a long finish that prolongs the pleasure on the palate. An elegant wine, both delicate and powerful, ideal for moments of conviviality.

The vineyards of Castellu di Baricci are located on decomposed granite arena soils, composed of silt and sand. Facing south-east on slopes, it benefits from a wide temperature range thanks to the Cagna mountain (1400 m). The estate grows 2.7 hectares of Sciaccarellu and Grenache grapes under the Sartène PDO. The vines are cordon de Royat pruned, with manual green harvesting and light ploughing, while favouring clay-based phytosanitary treatments.

After cooling overnight, the whole bunches are lightly pressed in a pneumatic press, then the juice ferments in temperature-controlled stainless steel vats at 9°C. After settling, fermentation lasts over a month at between 16 and 18°C, followed by 6 months' ageing in stainless steel on fine lees.

This Castellu di Baricci Corse Sartène Rosé goes very well as an aperitif or starter with fresh salads, baked sea bream or Corsican charcuterie such as Lonzu or Prisuttu. Skewers of marinated chicken or Corsican ewe's milk cheese are also excellent accompaniments. Serve chilled between 10 and 12°C.

The domain

Domaine Castellu di Baricci takes its name from a medieval castle overlooking the Ortolo Valley. This superb property is located in the municipality of Sartene in Corsica, between Ajaccio and Bonifacio. Castellu di Baricci gained its reputation in the 2000s thanks to its production which became very qualitative.

THE (RE)BIRTH OF CASTELLU DI BARICCI

Since the 19th century, Castellu di Baricci has been cultivated by the Quilichini family, winemakers from generation to generation since 1803. From the 2000s a new breath was given to Castellu di Baricci to produce quality AOC wines and oils. Elisabeth Quilichini has been managing this 150 ha farm since 2010, so the Domaine Castellu di Baricci has been awarded the Ecocert label after a conversion to organic farming.

The main motivations of Domaine Castellu di Baricci are to meet high requirements in terms of quality, local footprint and respect for the environment during works in Castellu vineyards, mostly carried out manually. The principles of biodynamics are used as plant decoctions to fortify vine plots where native and southern grape varieties grow. Castellu di Baricci also benefits from a microclimate and an exhibition making the vine growing ideal.

THE GREAT WINES OF CASTELLU DI BARICCI

The wines of Castellu di Baricci are produced in the three colours in the appellation Corse Sartene. The rosé wines are usually expressive, complex and fleshy with a ageing on lees that brings a nice length and matter to the mouth. The white wines Castellu di Baricci, elaborated with Vermentino, are lively and have floral aromas as well as a characteristic bitterness of this grape variety on the finish. Finally, the Domaine Castellu di Baricci red are juicy with silky tannins, a good balance between freshness and power.
