Castellu di Baricci Réserve Perpétuelle boasts a powerful, complex nose, combining aromas of spices and red fruits such as strawberry and raspberry, with a delicate touch of oak adding depth. On the palate, the wine is powerful, aromatic and long-lasting. Aromas of candied citrus fruit, red fruit, cocoa and tobacco blend harmoniously, underpinned by subtle, elegant tannins that add great finesse.

The sommelier info
Based on the Solera principle, this Réserve Perpétuelle wine is enriched each year with an additional vintage. The current cuvée is made from the 2015 to 2022 vintages, with a blend of Sciacarellu, Minustellu and Niellucciu, planted on specific plots to reflect the viticultural history of Sartène.
The soil is composed of decomposed granitic arena, forming silts and sands, with parcel-by-parcel selection. The vines, planted on south-east-facing slopes, benefit from a wide temperature range thanks to the Cagna mountain.
This red wine made by Castellu di Baricci ferments naturally, without the addition of yeast. After a 5-week vatting period, the wine is matured in oak tuns and demi-muids for 18 months, with a blend of 30% Minustellu, 30% Sciacarellu and 30% Niellucciu.

Castellu di Baricci Réserve Perpétuelle Red goes perfectly with grilled meats and dishes in sauce, such as beef bourguignon or lamb chops. It also goes very well with mature cheeses such as Brie de Meaux or goat's cheese. For a more refined experience, try it with a duck breast with red fruits. Serve at room temperature, between 16 and 18°C, after decanting for one hour.

The domain
Domaine Castellu di Baricci takes its name from a medieval castle overlooking the Ortolo Valley. This superb property is located in the municipality of Sartene in Corsica, between Ajaccio and Bonifacio. Castellu di Baricci gained its reputation in the 2000s thanks to its production which became very qualitative.
Since the 19th century, Castellu di Baricci has been cultivated by the Quilichini family, winemakers from generation to generation since 1803. From the 2000s a new breath was given to Castellu di Baricci to produce quality AOC wines and oils. Elisabeth Quilichini has been managing this 150 ha farm since 2010, so the Domaine Castellu di Baricci has been awarded the Ecocert label after a conversion to organic farming.
The main motivations of Domaine Castellu di Baricci are to meet high requirements in terms of quality, local footprint and respect for the environment during works in Castellu vineyards, mostly carried out manually. The principles of biodynamics are used as plant decoctions to fortify vine plots where native and southern grape varieties grow. Castellu di Baricci also benefits from a microclimate and an exhibition making the vine growing ideal.
The wines of Castellu di Baricci are produced in the three colours in the appellation Corse Sartene. The rosé wines are usually expressive, complex and fleshy with a ageing on lees that brings a nice length and matter to the mouth. The white wines Castellu di Baricci, elaborated with Vermentino, are lively and have floral aromas as well as a characteristic bitterness of this grape variety on the finish. Finally, the Domaine Castellu di Baricci red are juicy with silky tannins, a good balance between freshness and power.
