The Domaine Olivier Pithon cuvee Laïs white wine can be put in a caraf 1/2 hour before tasting. It is drunk during an aperitif or with mediterranean food like fish. To serve between 10 an 12°c.
Domaine
Domaine Olivier Pithon is located in Calce, near the Pyrenees and Corbières mountains but also the Mediterranean sea. Olivier Pithon’s plots benefit from high-altitude soils on shale, limestone and marl soils. Olivier Pithon was introduced to viticulture at an early age by his maternal grandfather, a winemaker in Anjou. After training and five years of work in Bordeaux, he met Stéphane Derenoncourt who encouraged him to create his own field. Thus, in early 2001, Domaine Olivier Pithon settled on its first 7 hectares, with the help of Gérard Gauby (Domaine Gauby). The philosophy of this passionate winemaker is and always has been to make wines that we love above all. Today, Domaine Pithon extends over 19 hectares and is considered a sure value of Roussillon.
Olivier Pithon succeeded in introducing biodynamic practices in 2010, after several trials. He sees this method as a dynamic way of working and maintaining his vines, especially thanks to the use of horn silicas in autumn and spring to stimulate the roots. Olivier Pithon wines are representative of its values and its terroir, so it offers several ranges: Mon P'tit Pithon, Laïs and some parcelled vintages. The cuvées Mon P'tit Pithon show freshness and roundness in the mouth, a nice wink from the Languedoc winemaker. Olivier Pithon created the vintages Laïs, referring to his cow of the same name, in order to propose a more intense, balanced and elegant wine.
