Viré-clessé

Viré-Clessé is a white wine from the Mâconnais in Burgundy, made exclusively from Chardonnay in the communes of Viré, Clessé, Laizé and Montbellet. It is one of Burgundy's most recent appellations, officially recognised in 1999 following the merger of the former Mâcon-Viré and Mâcon-Clessé appellations.

An appellation offering different levels of sweetness

What really sets Viré-Clessé apart from other Burgundy whites is its tolerance for a small amount of residual sugar. Unlike most Burgundy appellations, which are made exclusively in a dry style, Viré-Clessé can range from classic dry wines to richer, more opulent styles. These are made from slightly overripe grapes, sometimes even harvested at the stage known as passerillage, when the grapes begin to shrivel naturally on the vine without developing noble rot. This practice, which is unusual in Burgundy, allows the same terroir to produce very different wines depending on the winemaker's choices and the conditions of each vintage.

The key role of Domaine de la Bongran

It is impossible to talk about Viré-Clessé without mentioning Domaine de la Bongran, founded by Jean Thevenet and now run by his son Gautier. The estate, certified organic since 2008, has played a major role in establishing the reputation of the appellation's more opulent style, particularly through its Levroutée cuvée, produced only in vintages when climatic conditions allow the grapes to reach the desired level of overripeness. As a result, this cuvée is not made every year, perfectly illustrating the estate's philosophy of prioritising quality and terroir expression over consistency of production.

The aromatic profile of Viré-Clessé

A classic Viré-Clessé offers aromas of white flowers and dried fruit, with a generous texture and enough acidity to keep the wine beautifully balanced. The richer styles, made from later-harvested grapes, develop greater roundness and complexity, with notes of honey and truffle that can be reminiscent, to a lesser extent, of some great sweet white wines, without ever reaching the same level of sweetness. With such a range of styles within a single appellation, it is worth checking the label or the estate's tasting notes before buying to know what kind of wine to expect.

How to choose and pair a Viré-Clessé

A classic Viré-Clessé pairs naturally with poultry in sauce, fish or goat's cheese, much like other white wines from the Mâconnais. Richer cuvées such as Levroutée work particularly well with pan-seared foie gras, white meat in a creamy sauce or blue cheese, where their roundness finds a welcome contrast. Classic styles are best served at around 11-12°C, while richer cuvées can be served slightly cooler to preserve their balance.
