Première Cuvée Extra-Brut creates a genuine Champagne mosaic from more than thirty crus and a Pinot Noir-led blend complemented by Chardonnay and Meunier, together with a significant proportion of reserve wines. Only the first pressing is retained, part of the wines undergo fermentation in oak, and the cuvée spends three years on the lees followed by at least six additional months after disgorgement to gain harmony while retaining its energy. Citrus, white peach and red berries lead into almond, toasted and riper fruit nuances, with a silky yet precise palate whose low dosage enhances freshness and definition.
The sommelier info
The nose opens with fresh notes of lime and grapefruit, accompanied by almond and white peach. As it breathes, red currant, raspberry, and morello cherry gradually emerge, followed by some riper, more exotic nuances.
The attack on the palate is lively and precise, perfectly supported by the low dosage. Citrus, almond, and toast give way to red currant, cherry, fig, and blackberry, while the wine’s evolution in the glass reveals hints of pear and plum. The body has lovely fullness but retains a very dynamic, chalky texture. The clean, mouth-watering, and slightly salty finish provides a remarkably lingering aftertaste.
This wine is served with
Bruno Paillard Première Cuvée Extra-Brut Champagne pairs beautifully with oysters, citrus scallop carpaccio, butter-roasted turbot or chicken with morels; serve at around 9 to 10°C in a sufficiently generous glass to allow its complexity to unfold.
