Olivier Pithon's cuvée D18 is named after the road linking Calce to the Col de la Dona. This Côtes Catalanes white wine, made from Grenache gris and blanc grown on schist soil, is hand-harvested and aged for 18 months in foudre, with a low yield of 20 hl/ha.

The domain
Domaine Olivier Pithon is located in Calce, close to the massifs of the Pyrenees and Corbières but also to the Mediterranean. The parcels of Olivier Pithon benefit from terroirs at altitude on soils of shale, limestone and marnes.
Olivier Pithon was very early introduced to viticulture by his maternal grandfather, a winemaker in Anjou. After training and five years working in Bordelais, he met Stéphane Derenoncourt, who encouraged him to create his own field. In early 2001, Domaine Olivier Pithon was established on its first 7 hectares, with the help of Gérard Gauby (Domaine Gauby). The philosophy of this passionate winemaker is and has always been to make wines that we love above all. Today, Domaine Pithon covers 19 hectares and is considered a safe value of Roussillon.
Olivier Pithon succeeded in introducing biodynamic practices in 2010, after several tests. He sees this method as a dynamic way of working and maintaining his vines, especially through the use of horn silica in autumn and spring to stimulate roots. Domaine Pithon also applies techniques close to homeopathy, with dilutions, in addition to the daily work of the plots. Olivier Pithon has always preferred a regular control of the vineyard in order to guarantee the quality of his products: tasting and respecting soils as well as plants are therefore necessary.
Olivier Pithon wines are representative of its values and terroir, so it offers several ranges: My little Pithon, lay and parcellar cuvées. The cuvées Mon P’tit Pithon show freshness and roundness on the palate, a nice wink from the winemaker Languedocien. Olivier Pithon created the Laïs cuvées, referring to his cow of the same name, in order to offer a more intense, balanced and elegant wine. White lay is focused on minerality while red offers a brighter profile. The reputation of Domaine Olivier Pithon is therefore no longer to be done but to perpetuate.
