This Champagne Billecart Salmon is a totally mastered blend, with all 3 of Champagne's flagship grape varieties present in equal measure, and the balance is sublime. As the name suggests, the wine is vinified and matured in oak barrels at low temperature. Around 30% reserve wines are used in this champagne, which is aged on its lees for 6 to 7 years.

The domain
The House of Champagne Billecart Salmon extends over 100 hectares from the Côte des Blancs to the Montagne de Reims. More than 300 hectares from 40 wines from the Champagne region are used to produce Billecart Salmon champagnes.
The story began in 1818, Nicolas François Billecart and Elisabeth Salmon partnered to found their Maison de Champagne. A strong family history, Louis Salmon was also involved in the process of developing cuvées. Seven generations followed each other at Billecart Salmon and each member perpetuates the family tradition according to this oath: “prioritising quality, aiming for excellence”. The grapes used at Billecart Salmon come mostly from Epernay and its surroundings, where the great wines of the three emblematic grape varieties of the region: Pinot Meunier, Pinot Noir and Chardonnay.
Champagne Billecart Salmon decided to implement cold scrubbing and stainless steel cuvées in the 1950s. This material investment enables the continuous improvement of the developed cuvées. The vinification is carried out raw by raw and grape variety allows for greater precision and freedom of assembly, the fruit is then actually expressed. Billecart Salmon has more than 400 barrels and 24 lightnings in its two cellars, each of which has been carefully chosen to bring complexity and richness to the produced Billecart champagnes. They are then preserved in the precious chalk pits of Billecart House.
Champagne Billecart Salmon Brut Reserve is a subtle blend of the region’s three flagship grape varieties, from the most beautiful terroirs. It is a festive and aerial champagne, which will be willing to adapt for all occasions. Brut Sous-Bois cuvée is, as its name suggests, vinified undergrowth. We find a great mastery of balance and assembly on this champagne to achieve such complexity and a discreet woody, well integrated. Finally, Billecart Salmon Rosé is a must among rosé champagnes: greedy, lively and above all very fine. The range of Billecart champagnes can match each of your moments and desires!
