The nose of Chateau Pas du Cerf Red opens with aromas of black cherry, blackberry and blackcurrant, quickly complemented by notes of garrigue, thyme, sweet pepper and liquorice. With aeration, subtle roasted undertones add further complexity.

On the palate, it offers a supple and generous attack. The tannins are smooth and well-integrated, supporting a fruity and balanced structure. The wine retains plenty of freshness and finesse, with a lingering finish characterised by black fruits and Mediterranean spices.

Ageing takes place mainly in vats to preserve the freshness and purity of the fruit, with part of the cuvée undergoing a period in oak, depending on the characteristics of the vintage, to impart greater structure and complexity.

Chateau Pas du Cerf Red is the perfect accompaniment to grilled rib of beef, duck breast, Provençal beef stew, grilled vegetables, herb-crusted lamb or a selection of mature cheeses. The domain

Founded in 1848 in La Londe-les-Maures, Château Pas du Cerf is a must-visit family-run estate in the Côtes de Provence. Set on a unique schist terroir and cultivated using organic farming methods, the vineyard produces elegant and refined wines. Driven by several generations of passionate winegrowers, the estate authentically expresses all the richness and character of Provence.

Château Pas du Cerf is a family-run estate located in La Londe-les-Maures, in the Var, at the heart of the Massif des Maures. The property has belonged to the Gualtieri-Martin family since 1848, spanning eight generations of winemakers. It's currently run by Geneviève and Patrick Gualtieri's three daughters, Aurore, Diane and Marion, who share responsibilities across sales, winemaking and communication. The name of the site is said to date back to 1533: François I was staying on the coast for the wedding of his son Henri II to Catherine de Médicis when, during a hunt in the Maures, he killed a stag "at a walking pace" ("au pas"), on a steep stretch of terrain that is believed to have given the estate its name.

Terroir and Vineyard

The estate spans 700 hectares, including 80 hectares of vines planted amid a forest of cork oaks and strawberry trees. The vines grow on schist soils covered with quartz pebbles, on south-facing hillsides. The Mediterranean climate, tempered by the sea's immediate proximity and softened by steady winds, allows for slow, even grape ripening. Since 2018, all the estate's plots have been farmed organically and certified by Ecocert. The estate has also held Level 3 High Environmental Value certification since 2019, the highest level recognised in France.

Grape Varieties and Cuvées

The vineyard grows eleven Provence grape varieties: Grenache, Cinsault, Syrah, Tibouren, Carignan, Mourvèdre and Cabernet Sauvignon for reds and rosés, Rolle, Sémillon, Clairette and Viognier for whites. Château Pas du Cerf produces wine in all three colours, under the Côtes de Provence AOP and Côtes de Provence La Londe AOP, the latter created in 2008 to set apart wines from the coastal area. The range is built around several cuvées, including the "Château" cuvée and the "Diane" cuvée, the latter named after the daughter in charge of winemaking. The estate's rosés in particular have helped establish its reputation among the leading producers of the southern Var.

Beyond winemaking, Château Pas du Cerf is also open to visitors, with a tasting cellar, several educational trails through the forest, and an event space that can host up to 380 guests for private or corporate functions.
