Domaine Hauvette
Domaine Hauvette is a reference! The discreet winemaker Dominique Hauvette moved to Saint Rémy de Provence in 1988. She makes her first harvest while she owns only two hectares. Today, it grows 16 hectares in appellations Les Baux-de-Provence and Vin de Pays des Alpilles.
HAUVETTE, GREAT AMELIORATIONS FOR GREAT WINES
Domaine Hauvette continuously produces great red and white wines from Provence. The biodynamic culture since 2003 and the vinification without suffering by scraping and infusion respect the origin of the soil and the authenticity of its terroir. Domaine Dominique Hauvette has embarked on a breeding of its wines in “egg” tanks. These are cement-free eggs (zero magnetic field) where acidity and limestone claim their ying and yang neutrality. A stone cellar has also replaced the original cellar, allowing the creation of wines from the guard Domaine Hauvette Baux de Provence.

In 2020, 3 stars in the Guide des Meilleurs Vins de France are awarded to Hauvette Dominique and her Domaine, in addition to the many awards already earned in the past. DOMAINE DOMINIQUE HAUVETTE, FAMOUS WINES
Domaine Hauvette produces mostly red wines, beautiful racy cuvées with a potential for keeping. These include the cuvée Domaine Hauvette Cornaline composed of Grenache, Syrah and Cabernet-Sauvignon with its notes of black olive and truffle. The famous Amethyste cuvée is also known for its freshness, composed mostly of Cinsault with aromas of garrigue and cherry. For even greater drinkability, try the delicious Roucas cuvée. Not to mention the white Hauvette cuvées such as Dolia slightly smoked with fennel aromas or Jaspe, smooth but also bitter on the finish, as well as the latest addition, Fugue. Discover also the Pétra rosé cuvée, which is beautifully fresh and delicious.
CORNALINE
Cornaline is Domaine Hauvette's flagship red wine. Made from a blend of Grenache, Syrah, and Cabernet Sauvignon, it offers beautiful aromatic complexity: ripe black fruits, black olives, truffles, and a hint of mint. Structured, racy and with excellent aging potential, this wine reveals mellow tannins and a velvety texture over time.
AMÉTHYSTE
Améthyste is a refined wine dominated by Cinsault, sometimes accompanied by Grenache or Carignan depending on the vintage. It seduces with its freshness, finesse, and aromas of cherry, garrigue, and sweet pepper. On the palate, the wine is very light, with silky tannins and beautiful harmony, ideal for lovers of elegant reds with Mediterranean accents.
ROUCAS
Roucas is the estate's red for immediate enjoyment, both accessible and sincere. A blend that varies from year to year (often Grenache, Syrah, and Cinsault), it reveals a fruity and indulgent profile, with notes of cherry, blackberry, and sweet spices. Its freshness and suppleness make it a wine to be enjoyed young, on the fruit, while retaining the identity of the terroir.
DOLIA
Dolia is the estate's distinctive white wine, made from Clairette, Roussanne, and Marsanne grapes. Vinified and aged in concrete eggs to preserve its aromatic purity, it is distinguished by its full texture and subtle notes of fennel, white flowers, and light smoky hints. With its beautiful minerality and aging potential, Dolia is a racy and deep white wine.
JASPE
Jaspe is a softer white wine, often made from Roussanne grapes. It offers floral, slightly fruity aromas, with a finish marked by a delicate bitterness that gives it depth. Less complex than Dolia but just as elegant, Jaspe seduces with its freshness and balance, perfect as an aperitif or with fine foods.
FUGUE
Fugue is the latest addition to the estate's white wines. Made from Vermentino, it is lighter and more immediate than its predecessors. Aromatic, fresh, and expressive, Fugue reveals notes of hawthorn, white fruits, and sweet almonds. It stands out for its lively and digestible profile, ideal for immediate enjoyment.
PÉTRA
Pétra is Domaine Hauvette's rosé wine, a gourmet wine that is a far cry from simple summer rosés. A blend of Cinsault, Grenache, and Syrah, it is vinified using direct pressing and then aged on lees in concrete eggs, giving it a silky texture and beautiful depth. On the nose and palate, it reveals aromas of red fruits, peach and flowers, with a lovely freshness and a mineral finish.
