Domaine Baravéou crafts its Bandol Rouge predominantly from Mourvèdre, organically grown on the marl-limestone terraces of Le Castellet. Gentle extraction followed by 18 months of ageing in large oak foudres creates a deep, nuanced red, combining dark fruit, myrtle, garrigue and smoky notes with remarkably silky tannins. Already compelling for its balance of depth and freshness, it has all the structure required to develop gracefully over the years.

The nose has plenty of personality, with smoky and earthy notes quickly joined by hints of myrtle, garrigue, and black fruits. It benefits greatly from aeration: the bouquet gradually evolves in the glass and gains in complexity.
The palate is deep and structured without seeking to show off its power. The Mourvèdre develops a full-bodied texture supported by fine, velvety tannins, while a remarkable mineral tension keeps the whole in motion. The finish is long, fresh, and flavorful, with a lingering spicy and Mediterranean character.

Domaine Baravéou Bandol Rouge pairs beautifully with slow-cooked rosemary lamb shoulder, roast pigeon with olives, Provençal beef stew, wild boar casserole or charcoal-grilled rib of beef; serve at around 16°C and decant for one to two hours while young to soften the Mourvèdre and reveal its full aromatic complexity.
