Château des Bormettes Instinct Parcellaire is a rosé of gastronomy, subtle on the nose it reveals itself in the mouth. Aromas of blackcurrant and raspberry give way to notes of grapefruit, rose and anise. The palate is silky, complex and charming. We also distinguish the pineapple flambé in the finish. Instinct Parcellaire rosé comes from a rigorous selection of drop juices of Grenache and Cinsault in assembly with Rolle and Syrah. These last two grape varieties bring finesse and a beautiful intensity while the aging in concrete tanks on lees will bring fat and prestance. The domain
Château des Bormettes is located on the Var coastline, in the heart of the Côtes de Provence La Londe appellation. Les Bormettes owns 70 hectares of vineyards and 140 hectares of scrubland and forest. It is a place steeped in history, between land and sea.
The origins of Domaine des Bormettes date back to Gallo-Roman times. In the 16th century, it was run by the monks of the Chartreuse de la Verne, then in 1855 by Horace Vernet, Napoleon III's painter, who transformed it into Château des Bormettes. Over the centuries, the estate grew until it became a family property in 1929 with the Goulin family. Since the 1980s, Fabrice and Hélène Faré have taken over the Château des Bormettes, notably by accelerating the bottling process directly at the Château.
The Bormettes vineyard is planted on quartz and schist soils and is cultivated using sustainable farming methods. In addition, the vines at Domaine des Bormettes are on average 25 years old, which once again leaves a significant terroir imprint. In order to preserve the château's taste qualities and terroir, the cellar and wine storehouse have been modernised. The careful selection of plots and the diversity of grape varieties (Grenache, Syrah, Cinsault, Rolle, Mourvèdre and Carignan) are major assets for the Faré family, who wanted to protect Les Bormettes from urbanisation.
Château des Bormettes offers three ranges, making full use of the privileged terroir of La Londe-les-Maures: the Essential, Signature and Parcel ranges. The Côte & Mer vintages are wines focused on freshness and indulgence, demonstrating excellent drinkability. Finally, Les Bormettes also offers a selection of the best plots in the vineyard with its L'instinct Parcellaire vintages. These wines are the result of meticulous work and manual harvesting of the grapes. Finesse, elegance and terroir character perfectly describe these single vineyard wines.
