Olivier Red Wine is aged in 300-litre barrels for around a year. The wine's fine grain and light woodiness make its aromatic palette even more complex. The Syrah is highlighted by the spicy notes in this wine and, of course, the Tibouren, the emblematic grape variety of Pradet and of the wine estate, is also present for its power.

This Clos Cibonne Olivier is ideal with barbecued red meat, deer or beef stew. If possible, open an hour before serving, or ideally decant for better aeration. Serve at 17-18°C.

CLOS CIBONNE
The Clos Cibonne estate is located by the sea between Nice and Marseille. Clos Cibonne vineyard of 15 hectares is located in the Pradet and benefits from the influence of the sea sprays of the Mediterranean coast.
CLOS CIBONNE AN HISTORIC WINE ESTATE IN PROVENCE
The name Clos Cibonne refers to Jean Baptiste de Cibon, the former owner of the estate and also captain of the Royal Navy of Louis XVI. After his death, the Roux family bought the Clos Cibonne in 1797. It was not until much later, in the 1930s, that André Roux decided to devote himself fully to the cultivation of the vine. He then had the idea of planting Tibouren, an old Provencal grape almost forgotten for the time. Today, children and grandchildren perpetuate the tradition and continue to make the fame of Tibouren Clos Cibonne.
CLOS CIBONNE COTES DE PROVENCE
In 1955, 23 estates and castles of Provence obtained the Clos Cibonne, by Decree, the exceptional title of “Cru Classé”. Only 18 domains benefit to date from the appellation Cru Classé, thanks to André Roux’s efforts to improve and enhance the work of vine and Tibouren wine. He also ensured the recognition of the appellations controlled until 1973 and obtained the rank of Grand Protecteur in the Order of the Knights of Medusa. André Roux was one of the first ambassadors and activists for Provence wines, including Tibouren Clos Cibonne.
TIBOUREN CLOS CIBONNE
Since 1930, Domaine Clos Cibonne has produced two historical cuvées: the cuvée Clos Cibonne rosé and the cuvée Clos Cibonne Tradition red. Both are composed of 90 % Tibouren and 10 % Grenache. Tibouren is an ancient and noble grape variety but also delicate to grow because it requires special climatic and local conditions. It flourishes completely on the shale plots of Clos Cibonne due to sunshine and direct maritime influence. The assemblages are completed with Grenache, Syrah or Cinsault.
