Domaine
Chateau Minuty, domaine in appellation Cotes de Provence is situated on the peninsula of Saint Tropez, in the Var. 110 hectares of vineyards spread out on the peninsula and the heights of Gassin and are distributed in 70 plots of land exposed due south. Built under Napoleon III, Chateau Minuty was bought in 1936 by Gabriel Farnet. He then undertook to replant the entire Domaine Minuty in order to restore it to its former splendor. Subsequently, his daughter Monique and her husband Etienne Matton planted Provençal grape varieties such as Tibouren or Grenache.
In 1955, Chateau Minuty was l'une of 23 properties distinguished "as Vineyard Classified by the Côtes de Provence". On this domain, Jean-Etienne and François Matton produce 80 % of rosés, 10 % of white wines and 10 % of red wines. Chateau Minuty concentrates essentially on rosés top of the range which distinguish themselves by their nervousness, their freshness and their elegance.
Château Minuty is established on limestone and schist or clay-limestone soils according to the plots. Domaine Minuty favours a strict cultivation and tillage of the soil by the addition of manure of goats and sheep, no herbicide or pesticide is used. Minuty is therefore part of the Provençal estates in reasoned culture: in fact, the harvest is manual.

The winemaker
In their family since 1936, François and Jean-Etienne Matton are today in charge of Château Minuty. They find each other in vinificarion but they fan out the labour to develop the reputation of the domaine. They pursue the work of their grandfather in order to elaborate top high end wines.
