This cuvée has been elaborated in homage to Papé, alias Jean-Pierre Santini who was father and grandfather at the Domaine du Paternel. He passed away in July 2022.
The grapes are vinified in stainless steel tanks so that they retain all their aromatic complexity and their beautiful vivacity. Thus, this wine has nice floral and fruity notes, body in the mouth while remaining in the register of finesse. The balance is well mastered, a big bravo to the Santini family who still and always make prowess.
This wine is served with
Papé White goes very well with grilled fish such as bass, turbot or red mullet. It is also very appreciated as an aperitif. Serve at 10-12°C.
The domain
The Santini family founded Domaine du Paternel in 1943, and now owns some of the most prestigious land in the Cassis region. The first bottle was sold in 1951, and Jean-Pierre Santini and his wife relaunched Paternel a few years later. The second generation shares the love of wine and also works in the cellar and in the vineyard. Although the Paternel vineyard is best known for its Cassis wines, the wines are also produced under the Bandol, Côtes-de-Provence and Cassis appellations. In fact, their parcels cover 50 hectares, or about 25% of the appellation. As a result, this region has quickly become an integral part of Provence. However, the Santini family remains attached to its values and to the natural management of the vineyard: no pesticides, as much manual work as possible.
