The sommelier info
Vino Di Gio White from Clos Saint Vincent in Bellet appellation is the result of a complex elaboration: pellicular maceration, pressing, cold scrubbing, fermentation in cask with a sticking of almost six months with a year of ageing in barrels.
It will then be bottled without filtration which does not cause a slight natural deposit.
The nose is immediately balanced between floral notes and a tension that can already be perceived.
On the palate, white fruits are elegant and of great aromatic precision. The finish is slightly spicy and sapid. It’s big!
This wine is of a rare elegance.
Vino di Gio is produced between 600 and 800 bottles following the years, 40 Magnums and 8 Jeroboams.
